Title: Anatomy of Apple Color
Author: APS Citation
Abstract:
Work done by D. F. Dayton, of
Purdue University shows that. the
epidermis of the skin of Starkrimson
Delicious fruit is heavily pigmented,
but that the epidermis of Starking
Delicious is colorless.
W. A. Luce, of
Yakima, Wash., hypothesizes that the
epidermal color in Starkrimson may
be masking the browning caused by
sunburn, which is showing up in
Starking under the same conditions.
