Title: Fundamental Studies on the Large-Scale Cultivation of Edible Fungi

Abstract:

Though most of edible fungi come within the category of microorganism as basidiomycetes, there are many problems to be approached microbiologically in the method of their cultivation. In the protection against contamination and virus infection and in the improvement of productive efficiency, etc., microbiological approaches are expected. In these points of view, we studied the cultivation of edible fungi, Flammulina velutipes and other fungi.

First of all, the schema of methods of cultivation of general edible fungi in Japan is as shown in Fig. 1. Among these methods, "Hodagi" culture is the most popular, and Lentinus edodes, Pholiota nameko, etc., are cultivated generally in this method. Bottle cultivation is rather short in its history, developed rapidly for the cultivation of F. velutipes mainly. Comparatively speaking, the microbiological approaches are applied in this method. Vat cultivation is not an established method, because ot its weakness in the protection against contamination, but it is preferred for the operating efficiency. On the bed cultivation under the present condition, the demands for Agaricus bisporus or Volvariella volvaces are limited in Japan. On the other hand, there are many problems, such as the dearth of culture materials and labor and the protection against contamination in the cultivation plant of edible fungi.
