Title: Isolation and Chemical Structure of the Plasma-Cholesterol Reducing Substance from Shiitake Mushroom

Abstract:

For many years it has been a general belief in Japan that a species of mushroom, Lentinus edodes. Shiitake, is an elixir of life. Although no definite reason has been established for this legendary belief, the dried Shiitake mushroom is available in the Japanese market as an important item of Japanese food. In an attempt to document the physiological value of the mushroom, it was decided to investigate the effect of this fungus on several biochemical criteria associated with atherosclerosis and coronary heart disease. The present report deals with isolation and structural determination of a substance which reduces plasma-cholesterol level in rats.
