Title: Radiation Preservation of Fresh Mushrooms

Abstract:

Irradiation can markedly extend the shelf-life of mushrooms. Further advantages obtained by this method are (1) the caps remain closed, (2) in most cases the colour of the treated mushrooms is more white, (3) after cooking the flavour is found to be equal or even slightly better, (4) the incidence of surface mold fluff declines.

Electrons with an energy of 3 MeV gave excellent results. Comparisons were made between the effect of 1 and 3 MeV and gamma irradiation. When applying lower MeV's, higher dosages (Krad's) are afforded to obtain the same results. In general the possible storage period is found to be longer with a rise in dosage from 50 to 250 Krad. This favourable effect remains if, prior to exposing them to a higher temperature, the mushrooms were stored for some time at a lower temperature. The best results were obtained with a treatment as soon as possible after picking.
