Abstract: When I was first asked to give this paper, one of my greatest difficulties was to know what to say in a relatively short paper on a very large subject. Your Secretary-General most helpfully posed 16 questions of interest to mushroom growers, but when I studied these I realized that I could not answer them directly without a large number of qualifying 'ifs and buts', and I concluded that I could probably be of most help by explaining some of the theory that lies behind practice.
