Abstract: I. Investigations Concerning to the Carbon Metabolism Carbon sources : It is necessary for the cultivated mushroom, - as for all other fungus species - to have carbon at its disposal in a more or less complex form. Generally, carbohydrates are the carbon sources of the cultivated mushroom. In field and cultivation conditions, polysaccharides occur in the largest quantities among the carbohydrates. These are split by the aid of the hydrolysing enzyme system of the cultivated mushroom into monosaccharides, that is, five- or six-atom sugars. Only those polysaccharides which give the proper monosaccharide sugars by hydrolysis are suitable carbon sources for the cultivated mushroom, further, it must have the appropriate enzymes to liberate these monosaccharides. The utilizability of these sugars depends on their configuration. The preference for certain kinds of sugar may be a specific character.
