Title: Vitamin D2 Content and Retention in Agaricus bisporus with Ultraviolet Light Irradiation

Abstract:

White button mushrooms, Agaricus bisporus, were exposed to different ultraviolet B (UVB) light (wavelengths 290–315 nm) and harvested at different time intervals during the first break harvesting period. Mushroom exposure distances ranged from approximately 7 cm to 90 cm away from the light. Mushrooms from the first break were tested for initial colour and shelf life and then freeze-dried for analysis of the vitamin D2 content. Depending on exposure type and time, D2 values for irradiated preharvest mushrooms ranged from 3.7 μg/g of dry weight to 8.2 μg/g of dry weight (22% to 300% recommended dietary allowance) suggesting that mushrooms could be grown with UVB lights and be a significant source of Vitamin D2.
