Abstract: The high and steadily increasing consumption of fruits and vegetables in developed countries is due to the common knowledge that they are not only flavorful, but nutritious as well. It also is widely believed that the consumption of these foods will prevent and cure illnesses. On the other hand, mushroom consumption is, in most cases, driven by flavor and appearance. Other attributes of edible mushrooms, especially health benefits, are widely unknown. Today, the orthomolecular medicine established by Linus Pauling in the 1960’s is practiced worldwide. The merits of orthomolecular medicine include the maintenance of good health and treatment of illnesses by way of altering the concentration of natural substances in the human body. The most important of these substances are vitamins, minerals and trace elements. Based on a wealth of research data, we have summarized the nutritional value of cultivated edible mushrooms with respect to health components, and have defined the role of mushrooms in orthomolecular medicine. We propose that a program underscoring the value of mushrooms within the context of orthomolecular medicine would serve to significantly increase demand and consumption.
