Abstract: Spent mushroom substrates (SMS), obtained following a 4-wk harvest period of paddy straw and oyster mushrooms, were analyzed for their chemical characteristics and laccase and polyphenol oxidase activities. SMS was obtained from three different strains of paddy straw mushroom (Volvariella volvacea) as well as from two species of oyster mushroom (Pleurotus florida and P. euos). SMS from paddy straw mushroom had a pH of 8.8 to 9.2, while that from oyster mushroom had a pH of 6.5 to 7.7. Electrical conductivity of SMS from paddy straw mushroom was comparatively lower than that from the oyster mushroom. Total dissolved solids were lower in paddy straw spent substrate. Nitrogen content of oyster mushroom SMS was 1.82%, while that of paddy straw byproduct was 1.06% to 1.46%. Organic carbon and phosphate contents in spent paddy straw mushroom substrates were higher than in oyster mushroom substrates. However, potassium, magnesium and calcium contents in the two types of SMS were essentially equivalent. Polyphenol oxidase activity was highest in SMS from P. florida, which was followed by P. eous and paddy straw substrates. Laccase activity was highest in substrate from P. florida, followed by one strain of V. volvacea, Pleurotus eous and the other strains of V. volvacea.
