Title: Agaricus bisporus: Temperature Management for Cultures and Spawn Run

Abstract:

A series of experiments were conducted to better understand the interaction of substrate, temperature and strain on vegetative growth of Agaricus bisporus. Also, the effect of excessive temperatures during spawn run on mushroom yield was investigated. Data from replicated experiments indicated that most mycelial growth occurred between 21°C and 27°C, however both strain and substrate influenced the optimal temperature. When spawn run compost increased from 26°C to 36°C during a 12-h period, two hybrid off-white strains yielded from -10.6% to +2.9% compared to an untreated control at 26°C. Yield loss occurred, -6.2% to -22.4%, after compost was at 29°C to 39°C for an additional 12 h. With three commercial hybrid white strains at increasing temperatures between 27°C and 33°C for 12 h, yield response ranged from -9.3% to +4.6% compared to a control treatment at 27°C. These data suggested that hybrid white cultures were more sensitive to elevated temperatures during spawn run than hybrid offwhite strains, although a prolonged exposure to >27°C was injurious to both strain types.
