Title: Post-harvest quality in Agaricus bisporus: Changes in gene expression

Abstract:

Continued development and subsequent loss of quality in the cultivated mushroom, Agaricus bisporus, results in significant losses to the mushroom industry. Despite this, only one previous study had investigated the molecular aspect of this stage in mushroom development. Through the use of differential screening technology we have identified changes which occur in the mushroom during post-harvest storage. Nineteen genes/gene families have increased expression following harvest and storage for 48 hours and the function of 10 was elucidated. The data provide a valuable resource for the molecular study of developmental processes in the harvested mushroom and highlights how post-harvest biology in A. bisporus fruitbodies is regulated.
