Title: Effect of the high permeability to 02 on the quality changes and shelf-life of fresh mushrooms stored under modified atmosphere packaging

Abstract:

This paper reports studies of mannitol levels in mushrooms that have been stored at different conditions and for different periods of time, and their relationship with the packaging film. Kinetics of mannitol consumption is indicative of metabolic activity and is related to the effectiveness of the film in extending the shelf-life of the common mushroom. The quality parameters, in respect of the appearance and weight loss, are studied during 8 days of cold storage in MAP at 3°C, for two different polymeric films (OPP and PE), and after 3 or 2 days of shelf-life at 18°C.
