Abstract: The influence of culture conditions on the dry matter of harvested mushrooms was studied. Fruit bodies harvested at an early stage of development have more dry matter than those picked later. Mushrooms picked from thin casing layers usually have more dry matter than those from thick layers. If water uptake from the casing layer is made more difficult the dry matter of the fruit bodies increases. Water uptake from the casing can be decreased by adding osmotically active solutes or by cultivating on rather dry casings. The easiest way to grow mushrooms with a high dry matter content is by adding salts to the casing. Mushrooms with a dry matter of up to 12% can be produced. In our experiments a higher content of dry matter of the mushrooms was always accompanied by a lower crop yield.
