Abstract: The study compares the yield of log and sawdust systems of Shiitake (Lentinus edodes) production in which the primary source of nutnents is the hgno-cellulose component, to a new system based on cereal gram as a substitute for wood The greater availability and assimilation of the primary nutrients in the grain based substrate significantly improves the biological efficiency, productivity and economic prospects of Shiitake culture The new method does not require wood or wood byproducts and allows for the cultivation of Shiitake and other wood degrading mushrooms in areas lacking forest resources
