Abstract: In order to prevent yield losses In the cultivation of edible fungi, it is necessary to create selective substrates which support the growth of the edible fungi and suppress the weed moulds. The edible fungi Pleurotus ostreatus, Agrocybe aegerita and Kuehneromvces mutabilis could be cultivated in fermented wheat straw, while the competing mould flora was not able to settle in the substrate. The cause of substrate selectivity was the impoverishment of soluble nutrients in the straw during the fermentation process.
