Abstract: Species of Pleurotus are well known edible fungi and are considered as a delicacy by the connoisseurs of food. The various species of Pleurotus are generally wood destroying fungi, which attack both the cellulose and lignin components of the wood Analysis of fruit bodies of different Pleurotus species has been reported by different workers (Bano et al., 1963; Kalberer and Kunsch, 1974; Zadrazil, 1974; Jandaik and Kapoor, 1975) but it is generally not mentioned that at what stage of growth the analysis was carried out. Since the stage of growth is also known to effect the composition of fruit bodies, investigation of biochemical changes in fruit bodies, as a guide to metabolic activity of growth stages, should be of value as a basis for further improvement of Pleurotus species
