Abstract:
The paper begins by dealing with the world raisin production scenario in the context of Indian raisin production.
The necessity of diversification to raisin product in India is further elaborated giving characteristics of good raisins and varieties of grapes used for raisin production.
Further, cultural practices used for raisin grapes, technology used for raisin production and locations of raisin production in Maharashtra and Karnataka is further elaborated giving more stress on drying structures.
Quality of Indian raisins was also discussed in detail keeping in view the Codex standards and deficiencies in Indian raisins were highlighted for improvement and compliance to Codex standards.
