FRUIT QUALITY AND SUITABILITY OF NEW POLISH BLACKCURRANT CULTIVARS FOR PROCESSING

Abstract:
Results of studies on the processing value of 6 black currant genotypes are presented in this paper. Experiments were conducted in years 2001–2002. New Polish cultivars: ‘Tiben’, ‘Tisel’, ‘Ruben’, ‘Tines’ and clone PC-1 were compared to standard cultivar ‘Ben Lomond’. Nectars were processed according to industrial technology. The most abundant in soluble solids were PC-1 in year 2001 and ‘Tisel’ and ‘Tines’ in 2002. In both years soluble solids of ‘Ben Lomond’ fruits were below the average. In all investigated juices content of soluble solids much exceeded the requirements of AIJN Code of Practice (min. content 10.6%). Fruits of ‘Ben Lomond’ were characterized by the highest titratable acidity in both investigated seasons. However, the highest titratable acidity for juices was found for ‘Tiben’. Ascorbic acid contents in nectars from ‘Tiben’ and ‘Tines’ were at a very low level in both years. Moreover, juices from ‘Tines’ contained very low level of anthocyanins. This cultivar has only moderate suitability for nectar production due to relatively low soluble solids and bioactive compounds content. Despite the low ascorbic acid content, nectars from ‘Tiben’ had high anthocyanins content; this together with high soluble solids and acidity content in juices leads to the high usefulness of ‘Tiben’ for processing. Nectars from clone PC-1 contained the highest content of ascorbic acid in both years and relatively high content of anthocyanins. It may suggest suitability of this clone for processing, despite quite low acidity in the fruits.
