| Abstract:
The content of bioactive compounds in asparagus (Asparagus officinalis L.) is typically used as an index to determine the medicinal value of asparagus. Ten varieties of Asparagus officinalis L. were selected in this study for determining the activity of asparaginase and the content of flavones and rutin in roots, leaves, and spears. Results indicated that the activity of asparaginase was significantly higher in roots than in spears and leaves in all the varieties tested, while the content of flavones and rutin were remarkably higher in leaves than in roots and spears. Plant sex seemed not to affect the asparaginase activity in roots, leaves, and spears, but it did influence the rutin content. Rutin content in spears and leaves of male plants was greater than that in female plants. The asparaginase activity in the variety A7 was the highest; A7 was also high in flavones and rutin. | |
